Ingredients

• 1 onion diced
• 1 pound of sweet potato diced
• 1 head of cauliflower chopped
• 2 tbsp olive oil
• 1tsp kosher salt
• 2 tbsp curry powder
• 1 tbsp garam masala
• 1 tsp cumin
• ¼ cayenne pepper
• 28 oz can of diced tomatoes
• 15 oz can coconut milk
• 15 oz can chickpeas
• 4 cups of spinach
• Brown rice

Method

  1. Prepare rice
  2. Heat olive oil in pan and sauté onions (2 mins)
  3. Add sweet potato and sauté (3 mins)
  4. Add cauliflower, ½ tsp Kosher salt, sauté (5 mins)
  5. Stir in curry powder, garam masala, cumin and cayenne pepper, tinned tomatoes, coconut milk
  6. Bring to boil, cover and reduce heat. Let simmer for 10mins until cauliflower & sweet potato are tender
  7. Drain and rinse chickpeas. Add chickpeas & spinach and stir for 2 mins
