
Ingredients
• 1 onion diced
• 1 pound of sweet potato diced
• 1 head of cauliflower chopped
• 2 tbsp olive oil
• 1tsp kosher salt
• 2 tbsp curry powder
• 1 tbsp garam masala
• 1 tsp cumin
• ¼ cayenne pepper
• 28 oz can of diced tomatoes
• 15 oz can coconut milk
• 15 oz can chickpeas
• 4 cups of spinach
• Brown rice
Method
- Prepare rice
- Heat olive oil in pan and sauté onions (2 mins)
- Add sweet potato and sauté (3 mins)
- Add cauliflower, ½ tsp Kosher salt, sauté (5 mins)
- Stir in curry powder, garam masala, cumin and cayenne pepper, tinned tomatoes, coconut milk
- Bring to boil, cover and reduce heat. Let simmer for 10mins until cauliflower & sweet potato are tender
- Drain and rinse chickpeas. Add chickpeas & spinach and stir for 2 mins
