Serves 2


  • 200g lean beef mince
  • 175g rice
  • 1 onion
  • 1 carton of passata (930ml)
  • Selection of frozen vegetables (peas, carrots etc.)
  • 1 tablespoon of chilli powder (or more if you like it spicy!)


  1. Heat the chopped onion in a little water for 1 minute
  2. Add beef mince and stir-fry for a further 2 minutes until the meat is browned
  3. Add frozen vegetables, passata, chilli powder and simmer for 15-20 minutes
  4. Prepare the rice (wholegrain or Basmati is best)
  5. Serve chilli on a bed of rice
