
Ingredients (4 people)
- 250g brown rice
- 1 tbsp olive oil
- 1 onion diced
- 3 tbsp mild curry paste
- 600g stir fry vegetables
- 1 large can of chickpeas (500g)
- 1 can diced tomatoes
- 100ml coconut milk
- 1 mango cubes
- Pepper
- Coriander leaves
Methods
- Prepare rice
- Heat oil, fry onion (2 mins)
- Add curry paste and coconut milk
- Add veg, chickpeas, tomatoes & coconut milk. Leave to simmer for 10 mins
- Add mango at last 3 mins
- Add pepper
