Ingredients (4 people)

  • 250g brown rice
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 tbsp mild curry paste
  • 600g stir fry vegetables
  • 1 large can of chickpeas (500g)
  • 1 can diced tomatoes
  • 100ml coconut milk
  • 1 mango cubes
  • Pepper
  • Coriander leaves

Methods

  1. Prepare rice
  2. Heat oil, fry onion (2 mins)
  3. Add curry paste and coconut milk
  4. Add veg, chickpeas, tomatoes & coconut milk.  Leave to simmer for 10 mins
  5. Add mango at last 3 mins
  6. Add pepper
