
Ingredients
- 320g tagliatelle
- X2 tinned chopped tomatoes
- 1 tbsp brown sugar
- 1 tbsp red wine vinegar
- 2 cloves of garlic, peeled and finely chopped
- 1 courgette, chopped into cubes
- Olive oil (for cooking)
Method
- Cook the cubes of courgette in a pan with a tbsp of olive oil, cook for 10 mins
- Add the tbsp of brown sugar and tbsp of red wine vinegar
- Add the garlic and cook for another minute
- Pour in the 2 tins of tomatoes, then fill one of the tins with water and pour it in.
- Bring to the boil and simmer for 15 minutes
- While the sauce is simmering cook the tagliatelle as per instructions on the packet
- Drain the pasta then add to the sauce
