• 320g tagliatelle
  • X2 tinned chopped tomatoes
  • 1 tbsp brown sugar
  • 1 tbsp red wine vinegar
  • 2 cloves of garlic, peeled and finely chopped
  • 1 courgette, chopped into cubes
  • Olive oil (for cooking)


  1. Cook the cubes of courgette in a pan with a tbsp of olive oil, cook for 10 mins
  2. Add the tbsp of brown sugar and tbsp of red wine vinegar
  3. Add the garlic and cook for another minute
  4. Pour in the 2 tins of tomatoes, then fill one of the tins with water and pour it in.
  5. Bring to the boil and simmer for 15 minutes
  6. While the sauce is simmering cook the tagliatelle as per instructions on the packet
  7. Drain the pasta then add to the sauce
