• 450g potatoes
  • 1 tablespoon vegetable oil
  • 1 onion
  • 5 eggs
  • Salt & pepper (to season)
  • Paprika


  1. Boil the roughly cut potatoes until tender
  2. Heat the oil, add chopped onions and stir fry for 3 minutes
  3. Beat the eggs, add salt & pepper and pour into the frying pan with the onions
  4. Reduce the heat and cook for 5 minutes
  5. Sprinkle with paprika
  6. To crisp and brown the omelette you can place it under a grill for a further 1-2 minutes
  7. Serve on a bed of salad
