
Ingredients
- 450g potatoes
- 1 tablespoon vegetable oil
- 1 onion
- 5 eggs
- Salt & pepper (to season)
- Paprika
Method
- Boil the roughly cut potatoes until tender
- Heat the oil, add chopped onions and stir fry for 3 minutes
- Beat the eggs, add salt & pepper and pour into the frying pan with the onions
- Reduce the heat and cook for 5 minutes
- Sprinkle with paprika
- To crisp and brown the omelette you can place it under a grill for a further 1-2 minutes
- Serve on a bed of salad
