
Ingredients
- Pastry (you can make your own or you can use ready made shortcrust pastry)
- 4 large eggs
- 300mls double cream
- 120mls milk
- 200g bacon, chopped
- 1/2 large onion, chopped
- 150g grated Emmental cheese
- salt & pepper
- 1 tbsp butter
Method
- Prepare the pastry case. If using ready made pastry make sure you blind bake it first.
- Fry the onion in 1tbsp of butter on low heat for about 8 minutes.
- Add the bacon and fry for about 3 minutes.
- Whisk together the eggs, milk and cream and the grated Emmental cheese. Season with salt and pepper.
- Place onions and diced bacon onto the pastry crust.
- Pour the egg filling and bake for 25 minutes at 350°F (180°C) in the lower part of the oven. The quiche is done when it is golden and the filling has solidified. Use a clean butter knife to check, if it comes out clean it’s ready.
