A tasty healthier alternative to fried chips that work great with leftover boiled potatoes. Works great with my breaded fish recipe for a healthy Friday fish dinner!

Ingredients
Leftover boiled potatoes (or boil some and let them cool)
Smoked paprika (if you don’t have or like smoked paprika you could use dried oregano or just some ground black pepper. Try to avoid adding salt if you can)
Olive oil
Method
- Preheat an oven to 200’C (190’C Fan)
- Cut the potatoes into rough cubes.
- Place then on a baking tray and coat them in olive oil and smoked paprika
- Cook in the oven until golden brown (about 25-30 minutes should do)
